The other day over at Digital Whisper on facebook, Kimmie asked what we were doing for the day... Well, today I was up early to bake and so far we have almond sugar cookies, meringues, lemon curd AND Coconut Bars
Cococut... just reminds me of spring... and srpingtime desserts. This is a recipe from my mother, and I think her mother before her... The copy I have is a very plain recipe card, with the ingredients and directions typed on an old typewriter...maybe this this one...I love looking at the old card... very sweet!
So, here is the recipe... if you are a coconut lover... I think you will like this ... the only change I have made isadding a piece of parchment paper to the bottom of the pan... to prevent the crust sticking to the pan.. otherwise.. it is exactly as it has been made for many years!! Oh, and that is 2 tablespoons of flour on the topping!!! xo
Returned home from ARTFEST.. which was magical... I left all the pictures in my daughter's camera... so hope to have them back soon... so I can post some to share. I love Port Townsend and we had a wonderful time visiting old and new "haunts" while we were there. And, oh ,the simple pleasure of coming home, opening the car door and hearing one of my favorite sounds the "Spring Peepers"... I just love hearing their bubbly and cheerful chirping through the night. Peepers are very tiny and I have seldom seen one "in person" as they are nocturnal.... and live in my ponds. I did find this picture on Wikipedia.... so cute!
